the janitor, is it capitalized? The Janitor? or The janitor?
"janitor" is not his name, so it should not be capitalized.
"I'll have the janitor do it" or "I'll have the Janitor do it"?

well, the Discovery website 'writes' it two ways:Message from the Janitor
It doesn't take a detective to realize something strange is going on at Blake Holsey High. Follow the clues the Janitor leaves for you each week to begin to uncover the real mystery that's afoot.
— The Janitor the Janitor and/or The Janitor I used to think it was The Janitor, but lately I've been using the Janitor, other than as his signature on the JSMs, which I still use The Janitor with the JSMs. his J should be capitalized.

I would go with capitalising the J. It may not be his actual name (like, I don't know, Justin or Marvin ) but it's what his character is called. And as he's a major character, what he's called should be capitalised. (eg. it doesn't matter if you say 'the lunchlady' or 'the drama teacher' because they're not major)
